Yes. Set Until date later than Due date when you create or edit the assignment. Learners can continue working after the deadline until the Until date and time.
The assignment report will mark work completed after the due date as late, so you can distinguish it from on-time work.

To allow late work without a date-based cutoff, leave Until empty. Learners can continue to work on the assignment until you archive it.

To not allow for late work, set Until to the same date and time as Due date.
